Recipe: Kinda Healthy Banana Bread
I recently came across a wonderful recipe for banana bread at:

But I decided to increase the healthy factor on it by using whole wheat flour, earth balance spread instead of butter, and omega-3 rich walnuts. I also reduced the sugar to 3/4 cup. I found the texture to be delightful and the moisture content perfect--it made a moist cake that was neither too dry nor too oily/heavy.
3 ripe bananas, smashed
1/3 cup melted earth balance
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
3/4 cup of white flour
3/4 cup of wheat flour
1/2 cup broken walnut halves
Preheat the oven to 350°F. With a wooden spoon, mash butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a 4x8 inch loaf pan which has been lightly greased with olive oil. Bake for 1 hour. Cool on a rack and serve.
